Tabby Diaz

Executive Director

Tabby’s passion for senior care began in childhood when she watched her father, a minister, serve residents at a retirement home in Dayton, Ohio. Inspired by his compassion, she dedicated her career to seniors, becoming Indiana’s youngest licensed nursing home administrator at just 19. Her experience spans leadership roles in assisted living, independent living, skilled nursing, and hospital-based rehab, where she has remained committed to enhancing the lives of those she serves. Outside of work, Tabby cherishes time with her husband, two Maltese dogs, and two Cockatiels—and finds her greatest joy in bringing new smiles to seniors every day.

Carly Theilen

Assistant Executive Directo

Carly has been dedicated to senior living since 2010, starting as a Sales and Marketing Director in an independent and assisted living community as a teenager. Her passion led her to become a Med Tech, assisting with scheduling and operations while gaining in-depth knowledge of resident care and regulations. 

In 2014, she became an Assisted Living Administrator, Certified Dementia Practitioner, and ECC Coordinator, advancing her expertise across Independent Living, Assisted Living, Memory Care, and Skilled Nursing. Committed to building meaningful connections, she leads with empathy to ensure residents and team members feel heard and supported. Carly joined Arbor Terrace Citrus Park in 2024 and enjoys traveling and exploring different cultures outside of work.

Amanda Grau

Campus Director of Sales

Amanda fell in love with seniors by way of volunteer work more than ten years ago. She turned that passion into a full-time job in caring for seniors, which Amanda says has never felt like “work.” She loves educating potential residents and their families about senior living options and helping them make smart choices. For Amanda, every day at The Arbor Company is a learning adventure.

Katie Beattie

Community Sales Director

Katie brings a unique blend of sales experience, combining her background in the golf and country club industry with her passion for helping people regain their independence in the healthcare field. This perfect synergy led her to senior living, where she focuses on educating families and guiding them through one of life’s most important decisions.

Since joining The Arbor Company in 2018, Katie has built a reputation for fostering genuine connections and understanding the needs of seniors and their families. Originally from Panama, she graduated from the University of Florida and knows that true sales success comes from trust, empathy, and relationship-building.

Outside of work, Katie finds joy in fitness and running, cherishing time with her family, and creating meaningful moments that bring smiles to those around her.

Jaime Tomb

Community Sales Director

Jaime Tomb has built her career in customer service and sales, joining senior living in 2006 to follow her passion for helping others and making a difference. Since then, she has dedicated herself to serving seniors in independent living, assisted living, and memory care communities. She has also worked as a placement advisor supporting a territory of nine communities. Outside of work, Jaime enjoys crafting, reading, sports, and the outdoors. Most importantly, she loves spending time with her husband, Mike, and their two children, Reese and Cooper, with whom she shares a passion for traveling and cheering on their favorite sports teams.

Anastasia Papasarantopoulos, RN

Resident Care Director

Stacy began her nursing career as a floor nurse in a skilled rehab facility, quickly advancing to shift supervisor and later Assistant Director of Nursing, where she led, educated, and supported her team for six years. Her clinical expertise, calm demeanor, and strong communication skills earned her a promotion to Director of Nursing, a role she embraced wholeheartedly. Three years ago, she joined Arbor Terrace at Citrus Park as the Resident Care Director. Passionate about enhancing residents’ health and well-being, she is a dedicated advocate for their needs and strives to educate families and team members to ensure the highest quality of care.

Tiffany Harris

Memory Care Director

Tiffany has dedicated her entire 15-year career to senior care, gaining experience in skilled nursing, assisted living, and memory care. Originally from Grand Rapids, MI, she pursued her passion for caregiving by earning her nursing degree from Galen School of Nursing in St. Petersburg, FL. For Tiffany, working with seniors is a passion, and she finds joy in making a difference in their lives every day. Outside of work, she loves exploring new cuisines and being adventurous with food. She and her family recently took up kayaking and enjoy spontaneous road trips, always looking for their next great adventure.

Tammy Shannonhouse

Independent Living Resident Relations Director

Seeking a change in careers and environment, Tammy decided to move from Northern Pennsylvania-- opting for the warm temperatures and sunny skies of Florida. Her love for working with people brought her to Arbor Terrace in 2018. What a blessing! It is her privilege and pleasure to interact and assist the residents of Arbor, sharing family experiences and life journeys. She is appreciative of the opportunity to start this new level of her life and career with the management, staff, and residents of Arbor Terrace Citrus Park.

Jenny Orsatti

Resident Relations Director

Jenny has always loved helping others, especially within the healthcare and senior living industries. Jenny is happy to have the opportunity to serve our residents at Arbor and their families -- getting to know each of them and becoming part of their lives. The Citrus Park community feels like family; Jenny intends to work hard every day to make sure every resident feels like part of the family.

Morgan Menard

Engagement Director

Originally from Newport, Rhode Island, Morgan started her career in life enrichment in a skilled nursing facility in 2005. Since that time Morgan has enjoyed working through the continuum of long-term care including Independent Living, Adult Day Programming, Memory Care and Assisted Living. 

In her spare time, she loves working on home projects, gardening and spending time with her family. 

Susan Dietz

Engagement Director

Susan’s passion for senior wellness began in high school when she volunteered in senior living communities, leading exercise classes that ignited a lifelong dedication to health and fitness. With more than 30 years as a fitness professional, she has designed diverse programs and holds certifications in personal training, group fitness, and a 200-hour Yoga Certification.

In 2019, Susan became a Director of Engagement, finding fulfillment in creating meaningful programs for seniors. In 2024, she joined The Arbor Company, where she continues to enrich residents’ lives through her dedication to fostering a lifetime of wellness every day.

Dawn Pickering

Dining Director

With 40 years of experience in the restaurant industry, including two decades in senior living, Dawn brings a passion for hospitality and service to The Arbor Company. Before transitioning to senior living, she served as a general manager in restaurants, where she refined her leadership skills and commitment to creating exceptional dining experiences. Originally from Ohio and raised in West Virginia, Dawn moved to Florida in 2017, quickly became part of the local community, and nourished her love for working with seniors. In her free time, Dawn enjoys crafting with her family and perfecting her homemade spaghetti sauce—her favorite dish to make and share.

Daniel Flick

Dining Director

Born and raised in St. Louis, Daniel’s love for cooking started early, inspired by PBS cooking shows. That passion led him to the Culinary Institute of America, where he graduated in 1989. His career took off at Madison Square Garden before he headed to Miami, working with Hard Rock Café and helping open The Capital Grille. After running his own successful catering business, he returned home to St. Louis to join Fleming’s Prime Steakhouse. Teaching at L’Ecole Culinaire deepened his love for sharing his craft, and as Executive Chef for Parkway School District, he expanded his expertise. Now in senior living, Daniel is dedicated to creating meaningful dining experiences that bring people together.

Travis Williamson

Maintenance Director

Travis Williamson is originally from Cosby, Tennessee, where he began his career in public service. After attending the Tennessee State Fire College at Middle Tennessee State University, he served as a firefighter with the Cocke County Fire Department for two years. He then furthered his training at Walters State Community College, becoming an Emergency Medical Technician–Intravenous (EMT-IV) and working with Quality Care Ambulance Service alongside his role at the Cocke County Fire Department. In 2012, Travis moved to Florida, where he transitioned into senior care as a maintenance director in skilled nursing and assisted living. He served in this capacity for 12 years before joining Arbor Terrace in July 2024. Outside of work, Travis enjoys the outdoors and has a goal of visiting every microbrewery in Florida before retirement.

Rich Faughnan

Maintenance Director

Rich has worked in the maintenance field since 1988 and has been a Maintenance Director since 1996. He began his career with The Arbor Company almost 13 years ago.

Rich is originally from Jackson, New Jersey but now lives in Hudson, FL with his wife of almost thirty years and his dog named Scout, who is a Boxer. Rich is a big sports fan, especially football and hockey. He enjoys being able to connect with residents on sports!

Kelly Foley

Business Office Director

Kelly originally hails from Pittsburgh, PA, but has lived in many places across the country, including Michigan, Ohio, Southern California, North Carolina, and Florida. She began her career in senior living working in a corporate accounting office but discovered her true passion working directly in the community after visiting local communities and realizing that is where the action is! Kelly supported seniors across the state of Florida in an operations role before finding her new home at Arbor Terrace Citrus Park in 2021. She now serves as our Business Office Director and enjoys working with residents every day.

Laura Lucchesi

Assistant Business Office Director

Laura’s journey began in finance, working in the retirement industry, but her heart led her to senior living after a deeply personal experience with a family member. That moment sparked a passion for serving seniors, first in skilled nursing and later in assisted living, where she brings both financial expertise and genuine care to her role.

Beyond work, Laura finds joy in the simple moments—spending time outdoors, watching movies, and making memories with family. Her favorite way to start the weekend is with a quiet morning coffee alongside her husband, Joseph, the person who makes every moment even more special.
